Serves 4 (when at home I make a double recipe, although the sauce is much better fresh)
Ingredients:
1/2 lb pasta, any kind
1/4 cup salted butter
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
salt and pepper, to taste
Directions
Bring a large pot of water to boil. Salt the water and start cooking the pasta.
While the pasta is cooking, melt the butter in a heavy bottomed deep skillet or pot over medium heat. Stir the butter while it cooks, keeping it from burning. Once the butter starts to turn a medum golden brown colour (you will also smell it at this point) turn the heat to low and immediately add the cream. The pan will sizzle, but as you stir it will subside. Sprinkle in cheese and continue stirring until cheese is completely melted and sauce is smooth. Taste and add in salt and lots of pepper, as desired.
Drain pasta once it is al dente (check package usually 10 minutes or less). Pour into warm sauce.
Serve immediately.

DeleteIt says in the recipe 1/4 cup salted butter.
So if you are buying the kind that comes in the lovely pre-measured sticks, that's half a stick of butter.
