Quick and Easy Oatmeal Muffins

Ingredients:
2 eggs
2/3 cup brown sugar
1/2 cup vegetable oil
1/2 cup milk
1 cup all purpose flour
3/4 cup instant oatmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt

Directions
Preheat oven to 400 degrees.

Grease 12 muffin cups, or line with paper liners

Whisk eggs, brown sugar, vegetable oil and milk together in a bowl until smooth.

Stir flour, oatmeal, baking powder, baking soda and salt into wet ingredients to form a batter.
Fill the prepared muffin cups using your preferred method. (ice cream scoop. measuring cup etc)

Bake in preheated oven until tops are golden brown and an inserted toothpick comes out clean, between 17 - 20 minutes.

Let cool before removing from pan.

*Note* Chocolate chips or other yummies may be added to this recipe but be aware that too many may sink to the bottom of the muffins and make them difficult to eat.
